Another event that has caught my eye (and drawn me in enough to participate) is Muffin Monday hosted by Elena over at her blog Experiments. The theme is unusual muffins, or muffins that make you go ‘wow’… Well, when I came across these muffins as a budding teenage cook I definately had that reaction.
Now they are amongst my favourite things to make and even though my familiarity with them stops me from saying ‘wow’, I still give thanks to whoever thought to turn donut into a wonderful jam filled, cinnamon rolled muffin creation. I don’t know where this recipe originated from as it is on a recipe card in my favourite recipes box that I made as a teenager, before I thought it important to add a source to recipes for future reference.
Cinnamon & Jam Donut Muffins (Makes 12 muffins or 24 mini muffins)
Preheat your oven to 180C and spray a muffin tray with oil. Sift together 2C self raising flour & 1/2C brown sugar. In another bowl mix together 60g melted unsalted butter, 2 lightly beaten eggs & 1C buttermilk. Make a well in the dry ingredients and pour in the wet ingredients, mix until just combined (don’t overmix).
Microwave 1/4C strawberry jam (or your favourite flavour) along with 2Tbsp caster sugar for about 45 seconds, or until jam has melted and sugar is dissolved, mix thoroughly. Half fill muffin holes with muffin mixture and add a little bit of jam before filling up with more muffin mixture. Cook for 8 minutes in oven, until a skewer comes out clean.
Melt another 3Tbsp unsalted butter and mix together 1/3C caster sugar & 3tsp ground cinnamon in another bowl. One by one, brush each muffin all over with butter and roll in cinnamon sugar mixture.
Enjoy them warm & oozing!
